Recipe: Makes 12. 

Ingredients:

For the brownies: -

100g oat flour

50g cocoa powder

100g unsalted butter, softened

100g flaxseed

75g xylitol

3 sachets of powdered egg white

20g BlueberryActive dried blueberries

30g CherryActive dried cherries

50g whole hazelnuts

1 Tsp baking powder

200ml water

For the topping: -

50g very dark chocolate

20g BlueberryActive dried blueberries

30g CherryActive dried cherries

A handful of chopped hazelnuts

2 Tbsp water

 

Method

Before cooking pre-heat the oven to 160 degrees.

1) Cream together the xylitol and butter.

2) In a separate bowl, combine the flour, cocoa powder, flaxseed, egg white powder, baking powder, fruit and nuts.

3) Combine the two mixtures fully.

4) Gradually add the water and turn mixture in to a rectangular baking tin lined with baking parchment.

5) Bake in the oven for 10-15 minutes until a knife through the middle of the mixture comes out clear.

6) Remove from the oven and leave to cool.

7) Melt the chocolate and water together to make a runny melted chocolate, which can be drizzled over the brownies.

8) Sprinkle the additional fruit and nuts on top of the melted chocolate and leave to set.

9) Cut in to 12 squares and enjoy!
