Although processing methods may vary slightly between each processing plant where our concentrates are manufactured, typically the processing begins with the washing and sorting of the produce to ensure the raw produce is cleaned and graded for use. The fruit or vegetable is then placed in an extractor to separate out the juice by applying physical pressure.
The juice is then spun in a centrifuge at a high speed to filter out fragments of pulp. This is achieved as the refined juice is pushed out of the front of the machine through the inner basket whilst the larger pulp fragments stays inside the machine. We do not use any ultrafiltration and some batches of our concentrates may contain some natural sediment which can collect at the bottom of the bottles.
The juice then passes through an evaporator, which typically concentrates the product in a series of smaller steps. This helps minimise the heat that must be applied to the juice, protecting the colour and flavour. Evaporators operate at low pressure, allowing the water component to be evaporated more readily at lower temperatures, again to minimise the effects of the processing on the quality of the juice. In some cases the concentrated product is then pasteurised, but this is not necessary for all packaging formats as the evaporator stage applies sufficient heat to control microbiological activity in the product.

The main sugar in cherries is xylose, which has an exceptionally low GI/GL. Low Glycemic Index foods have a slow but steady impact on blood sugar levels. High glycemic foods cause a spike in sugar levels. Diabetics and high-cholesterol individuals in particular should be favouring low rather than high glycemic foods. Nine teaspoons has the same GI (blood sugar effect) as one teaspoon of granulated packet sugar. It is, in this regard, much better than fructose, which is the predominant sugar in many fruits but not berries.

CherryActive® cherries are harvested at their peak, normally during July/August and during processing some batches may have sediment which settles in the bottle. Variances in taste and color may also occur. Since CherryActive® products have no artificial colours or sweeteners, these variances may be noticeable in the product and it is not abnormal for the product color to darken with time. This is a natural process and in no way affects the efficacy of the product.
Some people prefer the drink CherryActive® concentrates undiluted ("straight"), however most people prefer to mix it with water or juice. A recommended ratio would 30 ml of juice in 250 ml of water or other beverage. DO NOT mix with a hot liquid as this will diminish the benefits of the concentrates.
